Barbara and Leonard Jacobs have studied culinary arts for over two decades, with an emphasis on natural vegetarian-based meals. They have managed restaurants, studied cooking with master chefs, and taught cooking to hundreds of students. Barbara Jacobs is involved in fine arts and design, and since 1983 has worked as an architectural color consultant in her own company. As a vegetarian I am always looking for cookbooks that will expand my cooking experience. This is a well written book with many well thought out recipes that are easy to follow. It is a keeper for my kitchen library and will be passed on to a "deserving" friend or family member only upon my death. I first discovered gluten in the seventies in a Magic Mill Mormon cookbook. As the making of gluten is fairly time-consuming, I learned to make a lot at a time and storing it for future use.

Leonard Jacobs is an author and cooking instructor. Their book, Cooking with Seitan provides an introduction to a versatile food. Leonard and his wife Barbara have studied culinary arts for over three decades, with an emphasis on natural vegetarian-based meals. This book brought me back to my early days of veganism, 20 years ago. That was way back when no one knew what a vegan was. Learning to replicate dairy, eggs, and meat was a seriously daunting process back then. The recipes were tolerable and you only tolerated it because you believed so strongly in not eating animals. Times have changed. People go vegan for other reasons now, and the food is expected to taste just as delicious as the non vegan kind.

Now, things are better. Vegans all over the world have discovered much better ingredients and techniques than what we had to put up with in the 90s and before.

I can't make these recipes because they're so dated and I'm afraid they'll taste like the vegan recipes I suffered through back around the time this book was written.

There are much newer resources available now in other books as well as YouTube and blogs. The information has been updated so I wouldn't recommend using this book if you're new to veganism.

It took 8 days to travel across the USA by usps covered wagon, it seemed. Yes, the printing of the book is old, that is why I ordered a used copy. I made my first batch of Seitan before the book arrived and the seitan was an absolute success. I have thumbed through the book to know it will be quite useful, as I continue exploring making seitan. If it becomes limited because of it's 1994 printing, I will order a newer printed book on creating seitan.

Not keen on this cookbook. "Cooking with Gluten and Seitan," by Dorothy Bates, is much more useable and versatile. The recipes in this particular book that I've tried have not been all that palatable. Will probably donate this cookbook to the local library sale.

This cookbook is very thorough. Explains the best ways to use seitan. Helpful explanations for how to avoid mistakes.

The book arrived in excellent condition and it has lots of useful info.
The Book of Seitan was instructional and interesting. I made a batch of homemade seitan following the directions in the book. Anyone who uses seitan will find this book valuable.
